Here's a simple recipe for Chicken Kachori, Pakistani-style:


Ingredients:


For the dough:


- 2 cups all-purpose flour

- 1 teaspoon salt

- 1/4 teaspoon baking powder

- 1/4 cup ghee or oil

- 1/2 cup lukewarm water


For the filling:


- 1 cup cooked and shredded chicken

- 1/2 cup onion, finely chopped

- 1/4 cup coriander, chopped

- 1/4 cup mint, chopped

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon coriander powder

- 1/2 teaspoon garam masala powder

- Salt, to taste

- 2 tablespoons lemon juice

- 1-2 green chilies, finely chopped (optional)


Instructions:


1. Make the dough: Mix flour, salt, and baking powder. Add ghee or oil and mix until crumbly. Gradually add water and knead until smooth. Cover and let rest for 30 minutes.

2. Prepare the filling: Mix all filling ingredients well.

3. Assemble the Kachoris: Divide the dough into 8-10 portions. Roll each into a thin circle. Place a tablespoon or two of filling in the center. Fold and seal the Kachori into a ball shape.

4. Fry the Kachoris: Heat oil in a deep frying pan over medium heat. Fry Kachoris until golden brown, turning occasionally.

5. Serve: Serve hot with chutney or raita (a yogurt and cucumber sauce).


Tips:


- Use a mixture of all-purpose and whole wheat flour for a crisper dough.

- Adjust filling ingredients to taste.

- For a crisper exterior, fry Kachoris twice: once at a lower temperature to cook through, and again at a higher temperature to crisp up.
