Here's a simple recipe for homemade Chicken Rolls, Pakistani-style:


Ingredients:


For the dough:


- 2 cups all-purpose flour

- 1 teaspoon salt

- 1/4 teaspoon baking powder

- 1/4 cup ghee or oil

- 1/2 cup lukewarm water


For the filling:


- 1 pound boneless, skinless chicken breast or thighs, finely chopped

- 1/2 cup onion, finely chopped

- 1/4 cup coriander, chopped

- 1/4 cup mint, chopped

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon coriander powder

- 1/2 teaspoon garam masala powder

- Salt, to taste

- 2 tablespoons lemon juice

- 1-2 green chilies, finely chopped (optional)


Instructions:


1. Make the dough: Mix flour, salt, and baking powder. Add ghee or oil and mix until crumbly. Gradually add water and knead until smooth. Cover and let rest for 30 minutes.

2. Prepare the filling: Mix all filling ingredients well.

3. Assemble the rolls: Divide the dough into 8-10 portions. Roll each into a thin circle. Place 1-2 tablespoons of filling in the center. Fold and seal the roll into a cylindrical shape.

4. Fry the rolls: Heat oil in a deep frying pan over medium heat. Fry rolls until golden brown, turning occasionally.

5. Serve: Serve hot with chutney or raita (a yogurt and cucumber sauce).


Tips:


- Use a mixture of all-purpose and whole wheat flour for a crisper dough.

- Adjust filling ingredients to taste.

- For a crisper exterior, fry rolls twice: once at a lower temperature to cook through, and again at a higher temperature to crisp up.
