Nankhatai is a popular Indian/Pakistani 

shortbread-like cookie! Here's a simple recipe:


Ingredients:


- 2 cups all-purpose flour

- 1/2 cup ghee or unsalted butter, softened

- 1/4 cup powdered sugar

- 1/4 cup cardamom powder (optional)

- 1/2 teaspoon baking soda

- 1/2 teaspoon salt

- Chopped nuts or cardamom seeds for garnish (optional)


Instructions:


1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

2. In a large bowl, whisk together flour, ghee or butter, powdered sugar, cardamom powder (if using), baking soda, and salt.

3. Mix until a dough forms. If needed, add a little water.

4. Divide the dough into small balls, about the size of a small lemon.

5. Flatten each ball slightly into a disk shape.

6. Place on the prepared baking sheet, leaving about 1 inch of space between each cookie.

7. Bake for 15-20 minutes or until the edges are lightly golden.

8. Remove from the oven and let cool on the baking sheet for 5 minutes.

9. Transfer to a wire rack to cool completely.

10. Garnish with chopped nuts or cardamom seeds (if using).
