A popular Pakistani street food! Here's a simple recipe for Chicken Paratha Roll, Pakistani-style:


Ingredients:


For the dough:


- 2 cups all-purpose flour

- 1 teaspoon salt

- 1/4 teaspoon baking powder

- 1/4 cup ghee or oil

- 1/2 cup lukewarm water


For the filling:


- 1 cup cooked and shredded chicken

- 1/2 cup onion, finely chopped

- 1/4 cup coriander, chopped

- 1/4 cup mint, chopped

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon coriander powder

- 1/2 teaspoon garam masala powder

- Salt, to taste

- 2 tablespoons lemon juice

- 1-2 green chilies, finely chopped (optional)


Instructions:


1. Make the dough: Mix flour, salt, and baking powder. Add ghee or oil and mix until crumbly. Gradually add water and knead until smooth. Cover and let rest for 30 minutes.

2. Prepare the filling: Mix all filling ingredients well.

3. Assemble the roll: Divide the dough into 2-3 portions. Roll each into a thin circle. Place a portion of the filling in the center. Fold and roll into a tight cylinder.

4. Cook the roll: Heat a non-stick pan or griddle over medium heat. Cook the roll until golden brown, turning occasionally.

5. Serve: Serve hot with chutney or raita (a yogurt and cucumber sauce).


Tips:


- Use a mixture of all-purpose and whole wheat flour for a crisper dough.

- Adjust filling ingredients to taste.

- For a crisper exterior, cook the roll twice: once at a lower temperature to cook through, and again at a higher temperature to crisp up.
